About Paul de Pierre
At Restaurant Paul de Pierre in Maarkedal, accessible gastronomy is at the heart of everything. The restaurant is always on the lookout for new products, sourcing ingredients directly from the origin. By personally visiting farmers and growers and following the entire process from feeding to slaughter, the highest quality is ensured, and the food chain is kept as short as possible. The menu is intentionally limited, with a strong focus on the origin and quality of the products.
In the restaurant's garden, 88 different types of vegetables, herbs, and fruits are lovingly and carefully cultivated, entirely organically and seasonally. In good weather, guests can take a look at the garden and see where their meal comes from. Every two months, a new menu is created, inspired by what the farmers and the garden have to offer at that time.
Owner Paul Henri is passionate about both food and wine. As a certified sommelier, he has curated a wine list with no less than 1,200 references, continually supplemented with new discoveries. Thanks to the "fair wine restaurant" label, guests can be assured of paying a fair price. Paul Henri has even planted a small vineyard, with the first harvest expected to be available in a few years. Together with chef Fabian Bail, who recently placed second in the "First Chef of Belgium" competition, the restaurant forms a top team. Fabian’s passion and dedication to cooking are unmatched, and he always strives for improvement.
